Section K of the Residence Application form asks if my the NZ person sponsoring my application is a 'spouse' or 'partner'... what's the difference? I assume a spouse is someone you're married to, and partner covers all other cases?

Yes.
Yes. However I used spouse for my husband even though NZ doesn't yet have same sex marriage. We were treated as spouses by INZ throughout.
I think I used partner in the application, but in everyday formal paperwork, I normally use spouse. There is no same sex marriage (yet!) in the UK either, so the civil partnership from over there becomes the civil union over here.
