I think you will have to have an official fixed address somewhere for business purposes. If you intend forming a company, that will need to be even more formal. http://www.business.govt.nz/companie...pany-addresses

IRD can give you loads of advice for free - check out http://www.ird.govt.nz/yoursituation-bus/starting/ with a look to their "tools" and the "community compliance officers". You should be able to find an advisor close to you that can help for free.
Or of course talk to an accountant or book-keeper. Most will meet you for an hour consultation to work out what you need and then provide a quote. If it is a simple structure then you might be surprised how reasonable they can be. And if you start using Xero (www.xero.com) with your bank account / code expenses it makes their job really easy (eg. cheaper!).
In regards to the address you could look at a mail forwarding service or Virtual Office provider. And to be honest I work at such a place! It depends on your situation. Setting up a company is a good idea because it removes you from being personally liable for the company debts. There is also the benefit of providing credibility to your business. The cost is pretty cheap to setup a company $160.22. However there is more compliance around a company - annual returns, company tax returns, company financial statements.
Xero is an excellent choice to use as an accounting system, simple to use but also very powerful. We are actually official Xero partners and could provide any advice or training.

You might find that if you go down the setting up a company route, the economic development agency in the area where the business is registered can offer advice and support free of charge. Also Business Mentors NZ are amazing too. Try googling them.
sounds more like an accounting questions you're asking, you can actually go to an IRD workshop (free) that explains what you can claim etc
