What phone is it? Most Australian phones should work without problem in NZ assuming you have enabled them for international roaming.
But if you do decide to buy a new phone whilst in NZ then yes, it will be able to phone UK or Australia without any problems.
It doesn't matter what network technology you are phoning to, just the one that you connect to, to initiate the call.
If you are planning on visiting UK or Australia then I would recommend you buy a mobile phone that can connect to the Vodafone network and NOT Telecom as this would allow you to take your phone with you and use in those countries.
