Yes, I guess a lot of us are more or less in the same boat.
As for me, I am and will be trying to get a job offer before the visa is processed. At least if NZIS interviews you to gauge your prospect in settling, you can say you've been trying to get a job.
Also, mentioning that your EOI has been selected to your prospective employer seems a good idea. At least that tells them that you're serious enough to have applied. Hopefully that will merit your CV being given a second glance...
