Easy enough to transfer the visa from your old to new passport, the visa length shown on the stamp would only be valid for the length of the passport though. Would not want to have any problems at immigration though if the passport is not valid for long enough, so personally I would probably try to get it sorted now so that a) you would avoid unnecessary problems regarding actually being allowed on the plane or into NZ b) to have the visa valid on the stamp for the entire lifespan of the visa.
My daughter's passport expired before her visa did just before we could exchange her student visa for her permanent resident visa and we just had the student visa transferred and it was then stamped with the correct length.
I have a Danish friend, and Denmark has no embassy or anything similar in New Zealand, so she will eventually have to go to Australia to get a new passport. There was, however, some sort of 'official' traveling to Auckland, and she was able to get an extension on her existing passport if I remember that correctly. It sounded to me as if that was something not happening on a regular basis, and Denmark has no special 'deal' with any of the other European embassies, seems to be something not usually happening (even if 'we' would find it a normal thing to do
).
