If you haven't got enough evidence of partnership (and you'd need about three months minimum) to qualify for a partner-sponsored visa, you will need to get together somehow to collect that evidence. If he is a UK citizen, in due course he could return to NZ as a visitor - there aren't big formalities as the UK is a visa waiver country. Likewise, you as a NZer could readily go and stay in the UK. Or you could both travel together to some other country/countries for which you are eligible for visas. As soon as you are together, you need to start collecting proof that you are partners living together. Here
