Default Serious guide and help needed please for smc residency

Hi currently i am working as commis chef in south island, I do not have any chef qualiication but i have three years qualification as a chef including my home country. I already applied residency before 7 months ago but i lost my job even i got co in 5 months. Luckly i got new job as a chef but immigration asked me all experience evidences and i gave them after battling too hard. So, regarding my experiences i have my head chef references ,bank salary, Ird summary but do not have regular payslip i lost. Is that evidence will be fine ?for them regarding my work visa they asked everything and even did not satisfied finally i gave my bank wages then they approved. I done two years Business full time study in new zealand is that will count for point? even thats not releavent to my job.Hopefully three years expereinces will eligible for residency? any chef residency visa approved story is here?. New life here again this time i have to get my residency .......hopefullly its too emotional for me

It says here http://skillshortages.immigration.govt.nz/chef when you click on the Skilled Occupations green bar (and this is saying Chef, which includes Commis Chef)
"The relevant work experience that the ANZSCO indicates may substitute the required qualification." And if you go to ANZSCO http://www.abs.gov.au/ausstats/abs@....OUP+3513+Chefs, it says, "At least three years of relevant experience may substitute for the formal qualifications listed above."
