    Default Hotel in Hong Kong

Can anyone recommend a hotel in Hong Kong for a one night stop-over? Don't need plush but not really basic either. Recommendations of must-sees while there for two days?

For one night I usually stay at the Regal Airport. It's attached to the terminal and you can use the MTR to travel into town very quickly. Another option would be the Novotel Citygate, which has a shuttle to/from the airport, and is above a decent outlet shopping mall. Travel into the city from Citygate will be a lot less expensive than the express train from the airport.

By must-sees - what kind of genre are we talking about?

Depending on your tastes, these can be wildly different activities!

Must-sees: a taste of the city in terms of interesting buildings, art, food plus ideally a sample of the natural environment, flora and fauna. Keen to explore on foot and local transport. Anything exciting for an active teenager in a day and a half's visit?

    try this famous attractions:
L'Avenue des Stars + Former Kowloon-Canton Railway Clock Tower: you can see the beautiful Victoria Harbour. Then you may take the Star Ferry toward Central.
Mong Kok - Sai Yeung Choi Street, Tung Choi Street (Ladies' Market).

For local food, there are million choices. I suggest when you arrived, ask people where to have the below (show this message in Chinese), which we Hong Kong local people always to go:
茶餐廳 (Tea restaurant, suggest to try "熱奶茶" "hot milk tea" here)
牛雜粉麵 / 魚蛋粉麵 (bovine offal noodles / "Fish egg" noodles)
中式茶樓(飲茶, 點心)(Chinese restaurant, eat "Dim-Sum", try breakfast or lunch here)
