I also received my AIP letter which asked me to send my passport in which I have done so that a visa label may be placed in it, however I was of the assumption that INZ no longer issued visa labels and as of September 2018 all visas were evisas?

I think you may find that they just require sight of your passport to make entirely certain that it is genuine before issuing the visa, rather than being about to put a label in it.
