Can someone please shed some light on why you’re asked to list all your family on an EOI for SMC visas? Am I supposed to list Grandparents, Uncles etc. or just parents and siblings?

You have to declare only siblings and parents. Not other family member.
I'm not sure why INZ ask it,maybe to double check in case you'll support any of them for a visa in the future.
