It is my (admittedly limited) understanding that I become a New Zealand tax resident if I spend at least 183 days in New Zealand in a given year. Is that 183+ days in a 'tax' year ending on March 31st, or a Calendar year?

It's a 12-month period ending on any date up to the present* during which you fulfilled the condition. https://www.ird.govt.nz/internationa...or-individuals
*That is, it won't continue to apply if you then go and settle overseas again.
