    Default How do I make pumpkin soup ?

    This time last year I was here in Christchurch on my fact-finding trip, and I got to try some really delicious pumpkin soup (along with good company & and an introduction to Rummikub).

    Well today I bought not 1 or 2 or 3 or 4 but FIVE large grey pumpkins for a grand total of $1 on Marshlands Road.

    How do I cook Pumpkin soup ??

    Funky pumpkin soup http://www.tararua.net.nz/recipes.php?pid=248

    OR

    Normal pumpkin soup
    1 1/2 kg pumpkin
    1 litre chicken stock
    1 medium onion, chopped
    425g can tomatoes
    6 spring onions chopped
    extra chicken stock or cream
    juice of 1 lemon
    1 teaspoon brown sugar
    salt and freshly ground black pepper
    sour cream
    chopped chives

    Peel and chop pumpkin and place in a saucepan with chicken stock, onion, tomatoes and spring onion. Bring to the boil and simmer until pumpkin is tender. Place in a food processor in batches and process until smooth. If too thick add extra chicken stock or cream if needed to achieve desired consistency. Add the lemon juice and brown sugar and season to taste with salt and ground pepper. Serve with a dollop of sour cream and chopped chives.

    Yummy

    PS I have roasted the pumpkin and then added it to the blender along with the other ingredienst, it makes it a bit tastier.

    This is the way i make it....

    Chop up and fry an onion, a carrot and a stick of celery in a little Olive Oil.
    Peel and chop the pumpkin.
    TO split it easily throw it hard against a brick wall or just onto the concrete!
    Add chopped pumpkin to stir fry
    Pour in enough boiling water to cover the vegetables and stir in a couple of teaspoons of veggie stock.
    Add a good big teaspoon of curry powder/paste and season it.
    (More if you like it)
    That's it.
    Just let it simmer for about half an hour then allow to cool.

    Use a stick blender/food processor to whizz through the soup and smooth it out.
    Serve with a big dollop of sour cream and a sprinkle of grated cheese.

    Thanks for that, I have never prepared one, and apparently they make great baby food, so need to start mushing one up.

    That soup sounds fabby too.

    Carol, thanks for the tip about throwing it onto concrete. I was going to use a wood saw and my workmate! (Had visions of fingers flying off if I attempted a butchers knife on it)Cheers,

    Pumpkin soup is lovely - really like pumpkin, so useful, and the seeds can be roasted and are very good for you. So don't waste them!

    As for nappies, can't comment on that LOL

    Stupid question but how do you roast them? Just on their own of do you need to brush them in oil?

    Nicola, to roast, just brush them in oil, like you would do for a potato or butternut squash...

    Just about to cook up some for the bub, I cheated and bought a pumpkin portion, so all I have to do is scoop out the flesh, none of this macho skin smashing stuff...
